FAQ

Already getting some questions, and anticipate more. Figured I'd answer them here.

Q: I have a food concern/special dietary need, can I talk to you about it?
A: Yes, by all means. My email is linked on the side of this blog. I'll do my best to accomodate. I'm already aware of the need for wheat/sugar/salt/nut/milk/egg free foods and am planning the menu to have at least one or two items of each. There will also be both vegan and vegitarian items.

Q: (insert item here) - is that period?
A: Some items are not period, but they are period-esque. Notoriously, coffee and hot chocolate are not period in the style that we consume them today. However, I'm labeling them 'schtick' as 'stomach physiks' and making them available. Why? It's an event in January, in Minnesota, and there's a walk between buildings on the site. Warm drinks are of the good.

Q: Will there be enough of everything for everyone?
A: There will be enough food for everyone. There will not be enough of each individual item for everyone. Items will be brought to the buffet in scheduled removes and rotated out when they're empty/when the remove is done. If there are leftovers, they will reappear on a side table during the after-Court portion of the buffet. If there are leftovers after that, they will be donated to the Dance Ball. There will be staple foods on the tables at all times.

Q: I'm a fighter and I'm worried that I won't be able to make it to the feast hall for any of the main course removes. What can I do?
A: Stop worrying? :) I'm going to work with the fight coordinators for both heavy and rapier to make sure I have at least one remove scheduled during a decent sized break. There will also be staple foods - pies, pasties, etc, available for you whenever you do have time to come get food. If scheduling becomes an issue, and there just isn't time between bouts for you to come to the food, rest assured - you will still be fed. Much of the food is designed to be portable for a reason.

Q: I've looked at the list and there's just absolutely nothing on there that I can make a substantial meal out of. Can I bring my own food?
A: Yes. If you need to store it in the kitchen, please let me know as far ahead of time as possible. The kitchen will be a busy place, I'd rather minimize the amount of pedestrians passing through it. You can still eat your own food out in the dining area.

Q: Will you be posting recipes/ingredient lists?
A: Yes. As soon as I have them finalized, I will post them here. They will also be available at site both in the dining area and at Troll. Kitchen staff will do their best to make sure items are clearly and accurately labeled. I will be available if there are questions about anything. If you have an allergy or ingredient-intolerance and you aren't sure if that item is in whatever you picked up - come ask me. I'd rather have a thousand people pester me with questions than one person have a reaction. When in doubt, ask. Please. (Granted, I'd rather nobody had the need to ask, and that's the general goal, but the best laid battle plans..yadda)

Q: What the heck is a tisane?
A: Herbal "tea". There is no actual tea plant in it. There will probably also be tea available, but since I had two hot caffeinated beverages, I wanted one hot one that wasn't.

Q: Do you want help? / I'd like to donate (item)
A: I'd love help. Most of this will be pre-cooked, so if you can follow a recipe and want to help out before the event, let me know. If you'd like to donate a munchable, I'm taking those too and will let you know in the next week just what kind of munchable I'd like to have. (Rule #1: There Is No Such Thing As 'Too Many Munchies'.) Thank you for asking.

Q: When will food be available?
A: Buffet will run from 11am - 1/2 hour before Court or 4pm, whichever is later. Dining room and kitchen will close for Court and reopen afterward and run until the food runs out or 9pm, whichever is later. Kitchen will close at 9pm for cleaning. Any food left over will be donated to hungry beggars or the Dance Ball.

Q: What volunteers do you need for kitchen staff?
A:
1) I will need help in the kitchen getting things into ovens, warmed, and out to the buffet table.
2) I'd like to have people to do rounds of the tables and clear off empty dishes, consolidate food, and bring out new foods.
3) I'll need help cleaning, both during the break for court and at 9pm.
4) If Their Excellencies/Highnesses/Majesties join us after Court, I would like their table to have a dessert cart and would like servers for that.

There may not be fish bits. If there are, they will be very few due to the pungent nature of this type of meat.

Greetings.

Greetings.

The feast for Nordskogen's 12th Night event will be run buffet style, with food available starting at 11:00am and running until half an hour before Court. The kitchen and dining area will close for the duration of Court and re-open with a dessert buffet after Court has finished.

The dining area seats 299 people, and this room is also available for social activities such as period games, or just a quiet place to sit and chat with friends.

At this time, I am asking that if you have a food allergy or concern that you wish addressed, you contact me via email with the subject line "TN:(whatever your concern is)"

I have a list of concerns already being addressed: Sugar-free, salt-free, wheat/gluten-free, dairy-free, egg-free, and nut-free. There will be both vegetarian and vegan dishes available. There will be no pork product used anywhere in the feast.

The menu will be published as soon as it is finalized. Ingredient lists will also be published as far in advance as possible. There will be ingredient lists available in the dining area and kitchen staff will do their best to make sure food on the buffet table is clearly labled.
